It seems as though there is currently no way to make this change programatically. The dev team asks that if you want this feature moved closer to the top of the list of feature requests please go to github and upvote this post.

I want to be able to specify the date format displayed in the dat… e_input widget, at the moment defaults to `%Y/%m/%d`.
Similar to Slider `format` option perhaps? as suggested here... https://discuss.streamlit.io/t/datetime-format-with-date-input/21272
